Gellan gum is very effective at low use levels in forming gels, and are available in two type, High Acyl Gellan Gum and Low Acyl Gellan Gum.
High acyl gellan gum forms very soft and non brittle gels. And Low acyl gellan gum forms hard and brittle gels,you can also vary the ratios of the two forms to make many interesting textures.
