Soy milk or soy beverage is made from soybeans and filtered water,they are a good source of protein, calcium (when fortified), and potassium for example with vitamins A, B-12, and D, as well as calcium.

Because it comes from plants, soy milk is naturally free of cholesterol and low in fat. It also contains no lactose.

Like other plant-based milk beverages, it may contain thickeners like gellan gum to improve consistency and shelf life.

As far as i know, almost all soy milks contain food gums like carrageenan or gellan gum. Especially gellan gum,is has been listed by FDA and JECFA as an SAFE food additive as stabilizer or thickener/Emulsifier to keep the soy or protein suspension very stable and improve the shelf life during storage.
